Cuddling with Books

The other day I tried making gluten free pita bread. It was a flop. I decided to buy a few gluten free cookbooks to learn more about it.

The books arrived today. I’m going to sit on the sofa and read a little and watch some tv. Then I need to go through another cross stitch pattern I found and decide if I want to start stitching it after winter gatherings.

I’m at the introduction of the gluten free cookbook and learning so much.

I didn’t know that you can not measure gluten free flour the same as wheat flour. And it’s best to use a kitchen scale.

Off to the store tomorrow to buy a kitchen scale.

Dinner

Here’s my dinner:

It’s Salmon, rice, beets, asparagus. With a glass of water.

Earlier today I started organizing and looking through a bin on my vanity.

Most items in this bin was thrown away. Yes, all nail polish was tossed. Only the clear nail polish was kept. I’m not into painting nails anymore.

Tomorrow there’s a few clients on my schedule. But I am planning to get to the store and then try to go through my cleaning supplies and reorganize the closet in the office.

Then stitching at night until I fall asleep. I don’t care for new years eve. So it’s not important to watch the ball drop. I rather get sleep!

Mission: To Minimize

This year my mission is to buy less and enjoy what I have. One of the things I have done was buy a book and never get time or energy to read.

So I gathered my books and put them in a bin. The bin is under my side table in my bedroom. The plan is to read every night for a half hour to an hour.

There’s no goal as far as reading all of these books. But the goal is to not buy any new books until I have read more than half that’s in the bin!

Only exception to buying a book is if I take a course related to my field and feel it will benefit me.

I wrote a list of books I have and want to read

Then I wrote a list of books I’m interested in reading that I heard about from other blogs at vlogs.

I continued writing my lists and this is a list of steps to take to minimize my life…

And these are the projects I want to finish before I take on more projects.

It’s a new year and time to make changes. Last year was stressful with no goals and no ambition. It was a year I was sick, felt bloated and extreme fatigue. Then I was diagnosed with gluten intolerance. And life changed. Now I want to own less, enjoy more and prioritize myself. I don’t want to focus on money but rather being smart about my purchases.

Morning Thoughts

Devotionals

Reading the devotionals this morning. It is about peace.

I read from Joyce Meyer Trusting God day to day. It is a lovely book with anedotes she shares that puts the scripture in perspective.

“Pursuing peace means making an effort.”

I hear so many of my clients wanting peace. I agree we need to make an effort in it, but we need to seek God for the help.

I usually ask my clients what behaviors can bring you peace?

Breakfast

My breakfast, green tea, toast with avocado and fried egg with everything bagel seasoning, and tomatoes and cucumbers with lemon basil vinaigrette.

Of course my cat has to lick the plate.

I have a few minutes before I have to take my dog out one more time before I head to the office. I’m going to tidy up a little and knit a few rows of the scarf I’m making.

Soup Anyone?

This evening became a wintery day. I drove home from the office with a wintery mix. Aaah the white Christmas wishers are getting their wish.

I made the cornbread muffins earlier in the day to have with soup I made last week.

Chicken Soup

It’s fairly simple recipe.

Crockpot, on high for 4 hours.

Put all ingredients in it together at once.

What you need:

  • Chicken breasts. Usually about 2 chicken breasts, if the package has three then I use three
  • 3 or 4 Carrots, or more, cut up in small pieces
  • 3 or 4 Celery sticks, or more, cut up in small pieces
  • Bone broth, one carton may need more.
  • Salt
  • Pepper
  • Parsley

Once chicken is almost done, I take it out of the crockpot and cut in small pieces/ sometimes it shreds. Then put it back for 30 mins or more.

This soup freezes nicely.

Later tonight, I’m going to do yoga, do my Bible study, read and watch a few vlogs. Then off to bed.

Simple Morning Routine

Today I woke up feeling lethargic and sad. Nothing happened between last night and this morning to bring on my sadness.

I ended up sleeping on the sofa for an hour after my pets wanted to be fed. Then I took a hot shower and took a short walk with my dog. I didn’t have enough time to walk her and make a hot drink before I had to sign on the computer for my first client.

Gluten Free Hot Chocolate

Hot chocolate sounded like a perfect feeling better hot drink.

I bought a gluten free hot chocolate Silliness by Nature/ silly ow farms. It’s expensive but certainly healthier for my digestive system.

First I pour almond milk in my cup to measure how much I need. Then I pour the milk in a saucepan. Heat it. I never bring it to a boil. I like the milk to be warm not overly hot.

While the milk is warming up, I measure 2 teaspoons of the hot chocolate mix and put it in my cup.

Then I pour the warm milk in my cup. And stir.

I had a few extra minutes so I started writing a list of books I want to read. I’m not an avid reader but I want to incorporate it into my evening relaxing routine.

After my session, I had time to prepare part of my dinner I will have tonight. Having an autoimmune illness, preparing meals ahead is helpful. Plus it’s supposed to rain and turn to a wintery mix. Ughh…

Last Friday I made chicken soup in a crockpot. I took that out of the freezer. And decided to make cornbread muffins. Using Krusteaz cornbread mix.

I decided to have a cornbread muffin with my lunch. It was tasty. Then afterwards I had the cinnamon muffin for some sweetness.

A Little Cinnamon, Please

After my flop making the gluten free pita bread. I turned my attention to what I want to eat for breakfast tomorrow and the next few days. I’ll be working all day and in the office for most of the day. Some clients want a video session because covid cases has increased in my county.

So out comes the box of gluten free muffins…

Tonight’s snack

I had a late lunch, a Cinnamon muffin and fruit, mango, watermelon and cantaloupe, was a nice snack before bedtime.

Relaxing Activities

Tonight I’m going to rest under my weighted blanket, read, do my Bible study and watch some vlogs I enjoy about simple living. And I might work on the shawl I have not finished knitting. And while knitting watch something on Netflix or Hulu. Then go to bed.

Here’s my Bible study journal and Bible-the New Testament and the book I’m reading by Joyce Meyer Healing the Soul of a Woman. I find this book a gift to read. It will be a book that gets read many times before I pass it to someone else.

Learning to Bake Gluten Free

This is my first attempt to make gluten free bread from scratch. I made the gluten free breads from Simple Mills box. Those are good, but I grew up making muffins, cakes and brownies by scratch. I used a recipe on a blog I found on Pinterest. I was not sure if I made this correctly. The directions slightly confused me, because I am not familiar with all of these different flours.

Tapioca flour, rice flour, psyllium husk. And the list can go on!

The Flours

I decided to use 1 to 1 Bob’s Red Mill baking Flour, Not knowing if this was a good substitute, when the recipe stated “substitute it for regular flour. So I didn’t use the tapioca flour or the psyllium husk.

Time will tell if I used the correct flour.

Recipe

It was simple to put together and mix. But I found it needed more water. I couldn’t shape it in a ball. I added a little olive oil in bowl too.

Put it in a bowl with cling wrap to tighten it so it can rise. I put mine with towels around it in front of my electric fireplace.

Section off 5 pieces and roll in a ball. Put back in the covered bowl for 10-20 mins.

It was a FLOP

So it was a flop. I am not surprised. I think it was the flour mixture.. the blog I was reading was thorough and organized. Not at all the writers fault. I need to learn how to bake gluten free!

What’s Next?

I ordered gluten free cookbooks about making bread and baking. I need to understand these flours.

The challenge of gluten free, soy free and dairy free is learning how to make recipes and relearning recipes without those ingredients.

Stitching Stockings

Yesterday was another relaxing day. I cleaned my house, finished organizing my art studio and then I did some cross stitching. I’ll be posting my organized art studio soon.

Tea Time

I couldn’t start my day without some tea. The goal for 2022 is to use more of my items around the house. I had this one mug (2 tea cup) size tea pot for many years. It comes with tiny cups, but I wanted to have more tea than those serve. It will be a frequent tea pot in my posts!

The tea of choice was green tea.

But First A Nap

I admit it, not much stitching happened. I ended up taking a nap. My cats and dog joined me. Nothing like a nap on the sofa on a Sunday afternoon.

Cross Stitching Winter Gatherings

I just ordered a delivery for a few new cooking items. 2022 will be a year of trying to bake more and learn how to bake gluten free. I’m missing some of my favorite meals and need to learn. Look for my recipe in a post coming shortly.

Stitching on Christmas Day

It was a day that became unfamiliar. First my electricity went out for an hour. The house got cold again. I was in the middle of cleaning and going through art work and supplies and reorganizing my room with all my art in it.

Christmas is Rescheduled

Then my sister called and cancelled Christmas dinner. Might try to have it on New Years Day. My brother was exposed to Covid and two of his coworkers were tested positive.

So I Decided to Return to my PJS

So I decided to return to my PJs, finish the cleaning. And started to put gesso on the canvases I want to reuse. Then you guessed it, I stitched winter gathering and watched Netflix for the rest of the day.

Update

I closed my Etsy shop. It was too much work with my career. I might return later when I feel more confident and ready to dedicate more time on it. In the meantime, art will be made…stay tuned.

Mondays Stitching

Today I had a few clients to talk to. Then I went to Joann stores for threads for my next large cross stitch. That will be revealed in a month or two. I need to finish the winter gathering. And want to finish the shawl I am knitting before I take on another cross stitch.

I had dinner but it did not settle well on my stomach. I had some red meat and that was a mistake. I’ll be relaxing tonight and hope this water pill helps get rid of the fluid I’m retaining. I did a 30 minute yoga. I feel much improvement with my back.

I probably won’t be posting much until the weekend. My schedule is full with clients the next few days.

So Merry Christmas if I don’t return to write before then.
