Snowy Stitching Sunday

It’s cold and snowy today. It’s a good day to be in PJs, blankets and drink tv with the electric fireplace heating up the room.

I am a big fan of hot tea. A few years ago I purchased a subscription to simple loose tea. I have a lot of packets still. My decluttering goal is to use what I have before I purchase more.

Today was chocolate mint black tea. It’s very good. Definitely a thumbs up.

Reminder of what it’s going to look like once it is stitched.

I became tired, my hands were getting tight.. it’s time to rest. I also want to watch some YouTube videos of my favorites before I go to bed.

It stopped snowing, but it’s going to start again tomorrow… At least I work from home tomorrow!

Butternut Squash Soup

Ingredients

  • Frozen butternut
  • Frozen Carrots-I used a half bag
  • Frozen diced Onions-I used about 1/4 cup
  • One sweet potato- diced
  • Cloves
  • Nutmeg
  • Salt
  • Pepper
  • Bone broth or vegetable broth

Put all ingredients in crockpot on high for 3-4 hrs. Then let it cool. Use an immersion blender to make it smooth.

Some recipes call for sweet apples. I did not have any. It is snowing today and I just didn’t want to go to the store. So I skipped the apples for the soup.

I was not a fan of this soup. I will not make this again. I prefer the butternut squash soup from Organic Imagine brand. It is gluten free as well. It is at Whole Foods Market and Amazon. I also found it at my local grocery store.

It might be a fail to my taste buds, but I’m really understanding what I prefer to make and store in my freezer and pantry. So that is a WIN!

Sunday Breakfast

The challenge is to use what I have in the freezer and pantry before it goes bad. Food prices are increasing and it’s time to honor what I have more everyday.

Gluten free Dairy free Breakfast

Ingredients

  • One Potato
  • Left over broccoli florets
  • Turkey bacon
  • Two eggs
  • Basil-I have need to use it!

While the potatoes are cooking, I’m drinking my electrolytes. The winter and cold is definitely causing dryness in my mouth and skin. I’m drinking Body Armor fruit punch. It is gluten free!

Autoimmune has this controversy do you eat or should you eat white potatoes. I have not found any difference in my flares if I eat white potatoes. So I will eat some white potatoes and then include sweet potatoes in my meals the following week if I want a potato. I eat white potatoes in moderation.
