Today was extremely hot. I started my day off drawing and working. I have been working from home lately. In a few weeks I will no longer be going into the office and I will be starting a new job working from home. This is a really good decision as I’m noticing my artwork has been improving and I am enjoying it.
After I had breakfast I had to get measurements for compression socks. I am having swelling in my legs and have gone to a specialist. In 2 weeks I have testing scheduled to determine what could be going on with my legs. So in the meantime I have to wear compression socks and keep my legs elevated as much as possible.
But today it wasn’t elevating my legs it was keeping my head down and my eyes closed because I had a migraine all day. I was able to make my dinner but I took a nap afterwards. It has stormed but my head still is throbbing so it’s another few hours of resting. I tried drawing throughout the day but did not get as much done as I hoped.
My Dinner
My dinner was gluten free dairy free macaroni salad and a tomato and cucumber and radish salad with lemon dressing. I cooked chicken thighs in a crock pot to go along with a salads.
This afternoon, lunch was planned. Lately, my stomach has been picky. I have to eat gluten free dairy free and soy free. Having digestive issues, rheumatoid arthritis and lipedema, this is the best diet to keep inflammation under control.
Portobello Mushroom Pizza
Ingredients
Portobello mushrooms
Tomato sauce
Vegan parmesan cheese
Olive oil
Toaster oven
Set toaster oven to 350 degrees.
Cut the stems and scrap out the black veins of the mushroom. Use a spoon or something blunt.
Put some olive oil on the mushroom where the stem was.
Bake in toaster oven for 3 minutes.
Flip the mushrooms over.
Add tomato sauce and cheese. Bake for 20 minutes. Keep an eye on it, mine was done in 15 minutes.
I served it with potatoes fried in olive oil. You can make a salad or have it with spaghetti. I was craving potatoes!
This is a gluten free dairy free and soy free meal. It is a meal for autoimmune.
Ingredients
Gluten free Rice noodles
Sesame oil
Lime
Cilantro
Salmon
Lettuce
Tomatoes
Cucumbers
Green onion
Black olives
Lemon basil dressing
Watermelon
Cantelop
Boil 3 tbsp water with sesame oil. Add the Rice noodles to the boiling water, cover and cook for 3 minutes. The noodles will break apart. Turn off the heat. Add cilantro and lime juice when it is finished
While the noodles and salmon cooks, make a salad.
Combine the noodles and salmon on a plate add watermelon and cantelop for a side along with the salad.
Let’s just face it, we all need a break and a relaxation night. I worked from home. (by the way, I have a second job) and I was exhausted. This night, nothing seemed to satisfy my taste buds. So my idea of feeding my stomach was simple and sweet.
This is the easiest snack to make. This can be for breakfast, lunch, snack and for this night, dinner.
Rice Cake with Peanut Butter and Strawberries and Bananas
Ingredients
Gluten Free Rice Cakes
Peanut Butter, Almond Butter, Cashew Butter
Bananas
Strawberries
Spread the peanut butter on the rice cakes, layer bananas on it. Use the remaining banana for a side snack along with strawberries. It can be made in 5 minutes!

Bread the catfish. I used an egg wash to coat the fish first then I put the gluten free bread crumbs on the catfish and placed it in a pan to bake on 350° for about 20 to 30 minutes.
While the catfish was baking I boiled water for the snap peas. Once when the snap peas are done which takes 4 to 6 minutes I drained the water and then added butter.
Cut up a tomato and cucumbers. Mixed together with salt and pepper and the lemon dressing or a squeeze of lemon place in the refrigerator to keep cool. Add basil for a garnish.
Bake a potato either in the oven or in the microwave whatever suits your lifestyle. Add dairy free butter and salt and pepper and chives on your baked potato.
This is a gluten free and dairy free spaghetti dish. Great for lunch and dinner.
Ingredients
Gluten free spaghetti
Garlic
Mushrooms
Cherry tomatoes
Spinach
Nutritional yeast
Boil water and cook spaghetti until it is to your liking. While it is boiling saute the mushrooms and garlic. Add tomatoes until the skin peels off. Set aside and pour olive oil in another pan and saute the spinach.
When spaghetti it done. Mix all ingredients together and add some nutritional yeast.
Eating gluten free and dairy free has helped me to be more inventive with my meal ideas.
Today I made a plate of cucumbers, tomato cut in wedges, guacamole and gluten free crackers. With hot tea. Then I had a few gluten free Oreos.
Dinner
The new Dutch oven was used, along with the new pans. They cooked this meal wonderfully.
Make rice. Then cut in slices zucchini and yellow squash and cut red onion in thin sliced. Saute with salt and pepper. Then add the mushrooms.
Then cook the shrimp. I used frozen cooked shrimp. I put cold water on the shrimp before it was heated up. I put butter in the pan. Then later I added coconut aminos for added flavor.
I put a sliced avocado on the side along with watermelon and cantaloupe.
