Portobello Mushroom Pizza

This afternoon, lunch was planned. Lately, my stomach has been picky. I have to eat gluten free dairy free and soy free. Having digestive issues, rheumatoid arthritis and lipedema, this is the best diet to keep inflammation under control.

Portobello Mushroom Pizza

Ingredients

  • Portobello mushrooms
  • Tomato sauce
  • Vegan parmesan cheese
  • Olive oil
  • Toaster oven

Set toaster oven to 350 degrees.

Cut the stems and scrap out the black veins of the mushroom. Use a spoon or something blunt.

Put some olive oil on the mushroom where the stem was.

Bake in toaster oven for 3 minutes.

Flip the mushrooms over.

Add tomato sauce and cheese. Bake for 20 minutes. Keep an eye on it, mine was done in 15 minutes.

I served it with potatoes fried in olive oil. You can make a salad or have it with spaghetti. I was craving potatoes!

Tuna Sushi Rolls and Soup

This is the first time I tried making sushi rolls. It was a slight challenge.

I mixed tuna with dairy free mayo.

This rolled it.

Then put plastic wrap around it and placed it in refrigerator.

I served potato soup and side of colorful carrots to the sushi tuna rolls. It was delicious

Gluten Free Rice Noodles with Salmon and a Salad

This is a gluten free dairy free and soy free meal. It is a meal for autoimmune.

Ingredients

  • Gluten free Rice noodles
  • Sesame oil
  • Lime
  • Cilantro
  • Salmon
  • Lettuce
  • Tomatoes
  • Cucumbers
  • Green onion
  • Black olives
  • Lemon basil dressing
  • Watermelon
  • Cantelop

Boil 3 tbsp water with sesame oil. Add the Rice noodles to the boiling water, cover and cook for 3 minutes. The noodles will break apart. Turn off the heat. Add cilantro and lime juice when it is finished

While the noodles and salmon cooks, make a salad.

Combine the noodles and salmon on a plate add watermelon and cantelop for a side along with the salad.

Slow Down Night

Let’s just face it, we all need a break and a relaxation night. I worked from home. (by the way, I have a second job) and I was exhausted. This night, nothing seemed to satisfy my taste buds. So my idea of feeding my stomach was simple and sweet.

This is the easiest snack to make. This can be for breakfast, lunch, snack and for this night, dinner.

Rice Cake with Peanut Butter and Strawberries and Bananas

Ingredients

  • Gluten Free Rice Cakes
  • Peanut Butter, Almond Butter, Cashew Butter
  • Bananas
  • Strawberries

Spread the peanut butter on the rice cakes, layer bananas on it. Use the remaining banana for a side snack along with strawberries. It can be made in 5 minutes!

For the drink: Almond Chocolate Milk

Gluten Free Catfish and Veggies

Ingredients

  • Catfish fillets
  • Gluten free bread crumbs
  • Snap peas
  • Tomatoes
  • Cucumbers
  • Lemon salad dressing or a squeeze of lemon
  • Salt and pepper
  • Baked potato
  • Dairy free butter
  • Chives
  • Basil

Bread the catfish. I used an egg wash to coat the fish first then I put the gluten free bread crumbs on the catfish and placed it in a pan to bake on 350° for about 20 to 30 minutes.

While the catfish was baking I boiled water for the snap peas. Once when the snap peas are done which takes 4 to 6 minutes I drained the water and then added butter.

Cut up a tomato and cucumbers. Mixed together with salt and pepper and the lemon dressing or a squeeze of lemon place in the refrigerator to keep cool. Add basil for a garnish.

Bake a potato either in the oven or in the microwave whatever suits your lifestyle. Add dairy free butter and salt and pepper and chives on your baked potato.

Gluten Free Spaghetti with Veggies

This is a gluten free and dairy free spaghetti dish. Great for lunch and dinner.

Ingredients

  • Gluten free spaghetti
  • Garlic
  • Mushrooms
  • Cherry tomatoes
  • Spinach
  • Nutritional yeast

Boil water and cook spaghetti until it is to your liking. While it is boiling saute the mushrooms and garlic. Add tomatoes until the skin peels off. Set aside and pour olive oil in another pan and saute the spinach.

When spaghetti it done. Mix all ingredients together and add some nutritional yeast.

Place basil on top as a decoration.

Serve with a salad and gluten free bread.

Gluten Free Lunch and Dinner Ideas

Lunch

Eating gluten free and dairy free has helped me to be more inventive with my meal ideas.

Today I made a plate of cucumbers, tomato cut in wedges, guacamole and gluten free crackers. With hot tea. Then I had a few gluten free Oreos.

Dinner

The new Dutch oven was used, along with the new pans. They cooked this meal wonderfully.

Make rice. Then cut in slices zucchini and yellow squash and cut red onion in thin sliced. Saute with salt and pepper. Then add the mushrooms.

Then cook the shrimp. I used frozen cooked shrimp. I put cold water on the shrimp before it was heated up. I put butter in the pan. Then later I added coconut aminos for added flavor.

I put a sliced avocado on the side along with watermelon and cantaloupe.

Bean Sprout Soup and a Salad

This is a gluten free and dairy free recipe. Both the soup and salad is simple and quick to make. Add a mint water to the meal for a refreshing drink.

Bean Sprout Soup.

Ingredients

  • I can of soybean sprouts 
  • 1 carton of Bone Broth
  • 1 Tbsp green onion
  • 1/2 tsp minced garlic
  • 1/2 tsp fine sea salt (or more to taste)

Rinse the bean sprouts from the can. If using fresh bean sprouts, also rinse. Leave the ends, as that is where most of the nutrients will be. Boil the bone broth. Add the bean sprouts and boil for 3-4 minutes. Add the green onion, garlic and sea salt and boil for 1 minute.

Green onions can be grown indoors. Place the roots in a glass jar with some water to cover the roots. Put by a window. I use a grow light since I have a lack of sunlight.

Apple Cranberry Raisin Salad with Broccoli Florets

Ingredients

  • broccoli florets-cooks till tender
  • cranberries
  • raisins
  • sunflower seeds
  • lettuce
  • one apple-diced, if making a small portion, option to use half of the apple.
  • lemon basil dressing from Paul Newman

Boil the broccoli florets until it is tender, drain and let cool. Use a large size bowl for the salad to toss everything together. Add together all the ingredients along with the dressing.

This salad has a sweet taste because of the raisins.

Mint Water

A mint plant can be grown inside. Place it near a window for the sunlight. In the summer, you can put it outside for more sun. I use a grow light on my plants since my home faces the north and has tons of shade from the tall trees that sit behind my townhouse.

Fill up your glass with water and ice, then add two or three mint leaves to the water.

The other option is to add lemon or cucumber to the water for a detox water.

This is a great refreshing and energizing drink.

A Review of Meals this Week

My diet consists of gluten free and dairy free and soy free. I have an autoimmune illness, juvenile rheumatoid arthritis.

On Monday, tuna, chicken BBQ and chicken burgers were prepared. Rice and roasted vegetables were also prepared.

An order from Whole Foods Market was made. They have the best gluten free and dairy free products, that I can not find anywhere else. Plus they deliver, so it’s easier to order there as my work schedule can be difficult to get to a grocery store.

I did not have a dessert every night. I finished the cinnamon muffins last night. The gluten free homemade biscuits were starting to loose it’s freshness so I had to toss those.

A spinach smoothie was made for Breakfast, along with eggs, avocado on toast and left over veggies were warmed up.

The refrigerator is now empty of this week’s meals.

This evening, I’ll make dinner. It will be a salad and a baked potato.

Tomorrow I work, so I have the chicken soup and tuna thawing. I will make those for dinner when I get home from a long day at work.

I’ll have to eat the grapes today for a snack. I also got out of the freezer the gluten free brownies I made the other day. And today I’m going to make blueberry muffins. Blueberry muffins will be my breakfast for tomorrow along with fruit. I’ll post the gluten free blueberry muffins.
