This is the first time using this mix. Very easy to make, with eggs, milk (I used almond milk) and oil. It suggests add-ons and gives the amount. I used blueberries since I had more than enough in my refrigerator.
I recommend to use this mix. It is simple and easy for anyone needing gluten free and dairy free products. But it is also simple for those with autoimmune and chronic pain to make. The time standing in the kitchen is only a few minutes.
Blueberry muffins were fabulous. The texture of the mix reminds me of using all-purpose flour. This mix is gluten free and it has a sweetness to the mix. Definitely will buy this mix again!
Today I started the morning off by a bubble bath and yoga. Then walked my dog.
For breakfast I had a smoothie and rice cake with peanut butter and banana.
Gluten free chocolate chip cookies
Then I started baking. I had this box of gluten free cookie mix by King Arthur in my pantry. I decided to give it a try.
I used a vegetable shortening from Whole Foods Market. It is from Spectrum culinary. And I used dairy free Enjoy Life chocolate chips.
The mix stirred up really nice.
They came out with a nice golden color. And very plump.
These were surprisingly good! Definitely will buy more boxes. Next time I will be adding more chocolate chips to the batter!
Dinner or is it Lunch?
Today’s menu is stir fry. This year I am working on buying food and meals as I go. This is a process for me to save money.
Stir fry. My Version
I had stir fry frozen bags in the freezer. Rice in the pantry. And beef in the freezer. pad Thai sauce in my pantry and coconut aminos was in my refrigerator.
I made the rice and set it off to the side. Then saute the beef, I will be putting it back in the skillet with the veggies. But first need to warm the veggies.
Add coconut aminos and Thai pad sauce, as much as you would like. I cooked it until it bubbled took about 20 minutes.
Serve together in a bowl. I had water for my drink (dehydrated) but green tea is a good choice as well.
Drinks-the goal for this year
I have too many juices in the refrigerator. My plan is to drink what I can by the end of the month. Then I’m going to dump the rest. And the only thing I want to concentrate on drinking is tea and water. I will at times have coke, because when I get those migraines it really helps.
Today I woke up feeling lethargic and sad. Nothing happened between last night and this morning to bring on my sadness.
I ended up sleeping on the sofa for an hour after my pets wanted to be fed. Then I took a hot shower and took a short walk with my dog. I didn’t have enough time to walk her and make a hot drink before I had to sign on the computer for my first client.
Gluten Free Hot Chocolate
Hot chocolate sounded like a perfect feeling better hot drink.
I bought a gluten free hot chocolate Silliness by Nature/ silly ow farms. It’s expensive but certainly healthier for my digestive system.
First I pour almond milk in my cup to measure how much I need. Then I pour the milk in a saucepan. Heat it. I never bring it to a boil. I like the milk to be warm not overly hot.
While the milk is warming up, I measure 2 teaspoons of the hot chocolate mix and put it in my cup.
Then I pour the warm milk in my cup. And stir.
I had a few extra minutes so I started writing a list of books I want to read. I’m not an avid reader but I want to incorporate it into my evening relaxing routine.
After my session, I had time to prepare part of my dinner I will have tonight. Having an autoimmune illness, preparing meals ahead is helpful. Plus it’s supposed to rain and turn to a wintery mix. Ughh…
Last Friday I made chicken soup in a crockpot. I took that out of the freezer. And decided to make cornbread muffins. Using Krusteaz cornbread mix.
I decided to have a cornbread muffin with my lunch. It was tasty. Then afterwards I had the cinnamon muffin for some sweetness.
After my flop making the gluten free pita bread. I turned my attention to what I want to eat for breakfast tomorrow and the next few days. I’ll be working all day and in the office for most of the day. Some clients want a video session because covid cases has increased in my county.
It’s a simple recipe with simple ingredients. My type of pace for baking!

I had a late lunch, a Cinnamon muffin and fruit, mango, watermelon and cantaloupe, was a nice snack before bedtime.
Tonight I’m going to rest under my weighted blanket, read, do my Bible study and watch some vlogs I enjoy about simple living. And I might work on the shawl I have not finished knitting. And while knitting watch something on Netflix or Hulu. Then go to bed.
Here’s my Bible study journal and Bible-the New Testament and the book I’m reading by Joyce Meyer Healing the Soul of a Woman. I find this book a gift to read. It will be a book that gets read many times before I pass it to someone else.
