I’m making gluten free carrot cupcakes.
Let’s give this a try. First time trying this recipe from this cookbook. Against All Grain by Danielle Walker.
Only difference I am making is the frosting. I’m going to use simple Mills vanilla frosting. Just because it’s easier and I have it in my pantry.
It was easy to follow. Nothing difficult to find at the grocery store to make these.
Here’s what the dough looked like after all the ingredients were mixed in.
I sprinkled some with coconut shreds. Others I left with just frosting.
I took them and they were a hit with my family. Who does not have to eat gluten free or dairy free.
Yea, a success!
