Romaine lettuce salad

Today I tried a different salad. This is a simple recipe. It can be made as vegan by omitting the bacon with vegan bacon.

This recipe quick to make, easy to stand in the kitchen without chronic pain issues. Easy to digest.

Ingredients

  • Romaine lettuce- cut it in small pieces before cooking.
  • Bacon-omit for vegan bacon
  • Radishes
  • Tomato- diced
  • Lemon
  • Potato
  • Follow Your Heart ranch salad dressing (contains soy)
  • Parmesan cheese or nutritional yeast- optional

Make the bacon. Cut it in small pieces. Add back to the pan and saute the radishes to heat them up. Then add the lettuce. Stir it several times, cook until it wilts.

Bake the potato. I added vegan butter and salt, pepper, and chives on the potato.

Pour the salad mixture onto a plate. Add diced tomatoes on top. Then pour the Follow Your Heart ranch salad dressing on top. Squeeze a lemon on top for extra flavor. Can add parmesan cheese or nutritional yeast for added flavor.

Serve potato and salad together. Add fruit in the side.

Tonight I’m going to rest and enjoy my dinner in front of the television. Maybe a craft later tonight. Definitely will be doing yoga. My back hurts from working all day.

A Review of Meals this Week

My diet consists of gluten free and dairy free and soy free. I have an autoimmune illness, juvenile rheumatoid arthritis.

On Monday, tuna, chicken BBQ and chicken burgers were prepared. Rice and roasted vegetables were also prepared.

An order from Whole Foods Market was made. They have the best gluten free and dairy free products, that I can not find anywhere else. Plus they deliver, so it’s easier to order there as my work schedule can be difficult to get to a grocery store.

I did not have a dessert every night. I finished the cinnamon muffins last night. The gluten free homemade biscuits were starting to loose it’s freshness so I had to toss those.

A spinach smoothie was made for Breakfast, along with eggs, avocado on toast and left over veggies were warmed up.

The refrigerator is now empty of this week’s meals.

This evening, I’ll make dinner. It will be a salad and a baked potato.

Tomorrow I work, so I have the chicken soup and tuna thawing. I will make those for dinner when I get home from a long day at work.

I’ll have to eat the grapes today for a snack. I also got out of the freezer the gluten free brownies I made the other day. And today I’m going to make blueberry muffins. Blueberry muffins will be my breakfast for tomorrow along with fruit. I’ll post the gluten free blueberry muffins.

Morning Solitude

This morning is a solitude morning. Quiet again. It is below zero wind chill and the cold really does go through your clothes. The house constantly is heated. I had to put blankets at the bottom of my doors to keep the cold out and the heat in. The windows also have towels along the window sill for the same reason.

I started my morning with hot tea and breakfast. It appears today will be a slow quiet day. I am hoping it will be that way for the entire day, as I will have to go into the office later.

Meditative Thinking

These slow quiet days allow me to think about what I want and to dream about it. The one thing I really want is to have a small house in the country and be able to work from home. I have not decided if I want to work from home at this time, or if I will wait another few years and do it. I need to also decide if I want to stay in my field. Working as a counselor for over ten years has been rewarding, but it is intense and quit frankly I am getting a burn out from the codependent needs and anger that comes through the office.

Meditative Goals

I dream of a holistic business, selling lotions, fragrances, candles, art, yoga and meditation items. I dream of providing coaching to improve the overall health. I want people to see the beauty and magic life can bring them. I want beauty around me and soft fabrics and warm colors and simple pleasures at work and at my home. I dream of a business with love and respect. I dream of peace and not having to worry about money and needing to worry about liability issues. I dream of a change for me.

Quiet Day

It’s a quiet cold morning while the snow blankets every reminder of grass and spring time.

The birds are quite, the people in the city are quiet and my home is quite.

My breakfast was the spinach smoothie, warmed up gluten free biscuit with dairy free chive cream cheese from Kite Hill, and a mandarin orange.

This is a wonderful book. It is for those yoga fans out there. A must read.

Snowy Stitching Sunday

It’s cold and snowy today. It’s a good day to be in PJs, blankets and drink tv with the electric fireplace heating up the room.

I am a big fan of hot tea. A few years ago I purchased a subscription to simple loose tea. I have a lot of packets still. My decluttering goal is to use what I have before I purchase more.

Today was chocolate mint black tea. It’s very good. Definitely a thumbs up.

I became tired, my hands were getting tight.. it’s time to rest. I also want to watch some YouTube videos of my favorites before I go to bed.

It stopped snowing, but it’s going to start again tomorrow… At least I work from home tomorrow!

Sunday Breakfast

The challenge is to use what I have in the freezer and pantry before it goes bad. Food prices are increasing and it’s time to honor what I have more everyday.

Gluten free Dairy free Breakfast

Ingredients

  • One Potato
  • Left over broccoli florets
  • Turkey bacon
  • Two eggs
  • Basil-I have need to use it!

While the potatoes are cooking, I’m drinking my electrolytes. The winter and cold is definitely causing dryness in my mouth and skin. I’m drinking Body Armor fruit punch. It is gluten free!

Autoimmune has this controversy do you eat or should you eat white potatoes. I have not found any difference in my flares if I eat white potatoes. So I will eat some white potatoes and then include sweet potatoes in my meals the following week if I want a potato. I eat white potatoes in moderation.

Today’s Meals

Today is cold with 12 inches of snow outside. The day might be a work from home day. Most of my clients are having their session by video. I’m waiting on one client to let me know what she wants.

I have not been doing yoga much lately. I started a yoga challenge with Yoga with Kassandra. The challenge is a 15 min yoga stretch and then a 5 min meditation.

I have energy after that!

Smoothie recipe

I had a fruit smoothie with blueberries, banana, dairy free yogurt and protein powder. Put all in a blender with almond milk.

Then I toasted a bagel and spread dairy free chive cream cheese from kite hill on it.

If course I needed a little chocolate, so I have 2 squares of enjoy life chocolate bar.

To make life a little easier, preparing for dinner early is the best thing to do for myself. After the client sessions, I’m exhausted mentally and physically my body is swollen from sitting most of the day.

I boiled frozen broccoli florets. That will be for the salad for dinner.

I also cleared out the refrigerator. I froze the fruit I had in there before it goes bad. That is the fruit I use for smoothies.

Brownies

I have the urge for chocolate brownies. The recipe is on the back of King Arthur gluten free measure for measure flour.

Lunch

Grilled chicken breast, rice, avocado and lemon dressing (Paul Newman’s salad dressing- lemon basil)

Simple Morning Routine

Today I woke up feeling lethargic and sad. Nothing happened between last night and this morning to bring on my sadness.

I ended up sleeping on the sofa for an hour after my pets wanted to be fed. Then I took a hot shower and took a short walk with my dog. I didn’t have enough time to walk her and make a hot drink before I had to sign on the computer for my first client.

Gluten Free Hot Chocolate

Hot chocolate sounded like a perfect feeling better hot drink.

I bought a gluten free hot chocolate Silliness by Nature/ silly ow farms. It’s expensive but certainly healthier for my digestive system.

First I pour almond milk in my cup to measure how much I need. Then I pour the milk in a saucepan. Heat it. I never bring it to a boil. I like the milk to be warm not overly hot.

While the milk is warming up, I measure 2 teaspoons of the hot chocolate mix and put it in my cup.

Then I pour the warm milk in my cup. And stir.

I had a few extra minutes so I started writing a list of books I want to read. I’m not an avid reader but I want to incorporate it into my evening relaxing routine.

After my session, I had time to prepare part of my dinner I will have tonight. Having an autoimmune illness, preparing meals ahead is helpful. Plus it’s supposed to rain and turn to a wintery mix. Ughh…

Last Friday I made chicken soup in a crockpot. I took that out of the freezer. And decided to make cornbread muffins. Using Krusteaz cornbread mix.

I decided to have a cornbread muffin with my lunch. It was tasty. Then afterwards I had the cinnamon muffin for some sweetness.

A Little Cinnamon, Please

After my flop making the gluten free pita bread. I turned my attention to what I want to eat for breakfast tomorrow and the next few days. I’ll be working all day and in the office for most of the day. Some clients want a video session because covid cases has increased in my county.

So out comes the box of gluten free muffins…

Relaxing Activities

Tonight I’m going to rest under my weighted blanket, read, do my Bible study and watch some vlogs I enjoy about simple living. And I might work on the shawl I have not finished knitting. And while knitting watch something on Netflix or Hulu. Then go to bed.

Here’s my Bible study journal and Bible-the New Testament and the book I’m reading by Joyce Meyer Healing the Soul of a Woman. I find this book a gift to read. It will be a book that gets read many times before I pass it to someone else.

I have been painting on a canvas for the past week. Each night instead of journalling in a notebook or in an art book, I took my journalling to a canvas.

Here’s the #6 intuitive Painting from yesterday.

I have been feeling more like myself. In the past few days decisions were made. I’m going to look into buying a home. I live in a townhouse, which I do love, but the neighbors and being on the board has caused toxic relationships to appear. I was happier here when I was not on the board. I had more free time and didn’t know what people were like here. Until now.

Yesterday, was house cleaning day. I started in my closet, took clothes to donation. And shredded papers and took that to recycle bin. In between of that, my art supplies got organized. I am happier to know that going inside a craft store is not needed any time soon. I certainly have own store!

During the evening it was relaxing, exercise and knitting. I fell asleep on the sofa. That felt great. I forgot to write and post this blog. So now it’s morning.

I will be seeing a few clients. And I will be resting maybe cross stitching. I’m glad to have my free time back.

I still want to quit being on the board, but not sure how soon I’ll find a house to buy. Until then I’m going to try to keep my peace.
