Fruit Ice Cream

It’s been a hot and humid few days. My air conditioner works but it takes forever for it to cool the house down. So there are times, I don’t have it on because that would be an expensive electric bill!

What’s the next best thing to have to cool down from a humid day? It is ice cream!

Dairy free ice cream is very expensive. It also leaves my stomach is a little pain and feeling uncomfortable. So I decided to try making a FRUIT ICE CREAM.

OMG it is so simple!

Fruit Ice Cream Recipe

  • 4 cups frozen mixed berries-use any fruit combination you want
  • 1 cup coconut milk or any milk of your choice
  • 1/2 tbsp powdered stevia or more to taste, also can use honey or maple syrup

Use a food processor. Place the frozen berries in the processor, along with the milk and sugar. Process until it is smooth. I had to make small portions because my processor wouldn’t work with it completely full.

Then place the smooth fruit mixture in a metal pan(bread pan), cover with cling wrap and freeze.

set it out for 5-10 minutes to soften before you want to eat it.

Gluten free chicken meatballs

Something new to post A new recipe at 4pawsartstudio….

Since I began the gluten free, dairy free, and soy free lifestyle it’s been slightly challenging to make some changes.

For instance, dairy free sour cream yuck, but Kite Hill is the best one.

Dairy free cream cheese, I’m still looking.

Bread? Everyone on gluten free diet knows bread is irreplaceable. Canyon is the best and can be found at target and whole foods. But there’s others that can be bought through their website which I have not tried. But heard they have less sugar and more healthier and actually tastes like bread.

Back to the gluten free, dairy free chicken meatballs..

I used a recipe from Pinterest and converted it to gluten free and dairy free products.

Here’s the recipe

1 pound ground chicken-or turkey

1 egg

1/2 cup gluten free breadcrumbs

1/2 cup dairy free parmesan

2 tablestoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

black pepper

additional seasoning-Italian seasoning

combine all ingredients and mix together. Roll into small balls. I made this in a crockpot. Put the setting on high, spray crockpot with olive oil, add dairy free butter to the bottom of the pan-a few small slices, add about 1 tablespoon of water to the crockpot before placing the meatballs in it. Cook for about 3 hours. stir halfway through to prevent from burning and sticking, may need to add additional water to the crockpot.

I made a salad with these meatballs. I do not care for gluten free pasta. Having an Autoimmune illness, Rheumatoid Arthritis, I need to eat mostly anything that will help flush out the fluid my body retains.

Salad recipe:

green leaf lettuce

mixed salad greens

dandelion

green onion

apple cut in cubes

lemon salad dressing

mix together and enjoy

I Did It!

Six months ago, I seeked help with my digestive issues and physical health from an acupuncturist. It was life changing.

I have been gluten free dairy free and soy free for 6 months. Looking back, there was a feeling of dread if this way of eating would be worth it.

The cabinets and refrigerator was cleared out. Food donated to the church and off to grocery store to find “food”

Today, there are times I have challenges shopping. For the most part my list is about the same. Lettuce, green onions, fruits, fruits and fruits, vegetables, vegetables and vegetables. Some gluten free chips and cookies. And chicken and fish. No dairy.

What do I miss the most. The convenience of eating anything without thinking much about what is in it.

What am I craving now? Lasagna. I have not even attempted to eat or make it.

It was worth it. The progress I’m making in my life again is an amazing feeling.

Here’s what I made today:

Gluten free dairy free blueberry muffins

  • 1 3/4 cups measure-to-measure king Arthur gluten free flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 beaten egg
  • 3/4 cup milk
  • 1/4 cup cooking oil
  • 3/4 cup blueberries

Mix flour sugar, baking powder and salt. Make a well in the center.

In another bowl combine egg, milk and oil. Add egg mixture to flour mixture.

Bake 400 degrees for 18-20 minutes

Tonight’s dinner is a chicken burger with salad and pineapple.

  • 2lbs ground chicken
  • 1 tablespoon coconut aminos
  • 2 teaspoons sesame oil
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 teaspoon sea salt
  • 3/4 teaspoon sesame seeds
  • 1/4 teaspoon crushed red
  • 1/4 teaspoon black pepper
  • pepper
  • 6 slices pineapple.

Mix all ingredients besides pineapple. Form into patties. I use a cast iron grill pan, cook until brown.

Add pineapple on top of burger and serve with a salad.

Sunday at the Studio

It’s a hot day! My dog and I had a nice stroll around the neighborhood for her morning walk.

She’s now laying in the coolest spot in the house. While I’m outside enjoying the courtyard. Being in my courtyard helps me to be creative.

Since the inflammation from edema and rheumatoid arthritis is flaring today, it’s a resting day.

The acupuncturist told me to drink water with mint leaves and cucumbers during these hot humid days to release the fluid.

Mint and Cucumber Recipe:

  • A few mint leaves
  • A few slices of cucumbers
  • Glass of water with ice cubes

Below is the mint plant on my outside bistro table.

Today, I’ll work on knitting the scarf and maybe will spend time in the studio painting. My legs and feet are swollen so it will be determined how I feel if I sit at the art table.
