Kidney beans with broccoli salad

Ingredients

  • Boil broccoli and drain
  • Warm kidney beans in a pan with olive oil
  • Walnuts, warm with kidney beans
  • (use pecans or another nut if you want)
  • Lettuce-any type
  • Hemp seeds-optional
  • Shredded cheese -any type, vegan
  • Olive oil dressing

I used a small amount of kidney beans. You can freeze the rest in a container for another use.

This salad is delicious. Especially with the warm kidney beans, walnuts and broccoli added to it.

It can be served as a main dish. There’s plenty of protein in it, with hemp seeds, walnuts, kidney beans and broccoli. It will definitely fill you up.

Review of Lentil Bolognese-Vegan and Gluten Free

This is a recipe I found on Pinterest. I made it with gluten free pasta.

Soak the lentils in water, it helps to release the starch from it. I have digestive issues and this method really helps to decrease bloating and gas.

Saute carrots, onions and celery.

The recipe called for tomato sauce, tomato paste and crushed tomatoes. Next time I’ll just use tomato sauce. Using all three makes a very large quantity so I will be cutting it in half.

This is a photo of the lentils and the sauce cooking You want to cook them for 25 to 30 minutes to the recipe. I think I would actually cook it next time for about 45 minutes to an hour to get the lentils a little bit softer. It might have been because my pot was smaller and this makes a larger quantity.

This is the leftover lentils I put only half of the lentils in the sauce. It just called for way too much. I ended up putting these lentils and the rest of the tomato paste in a container and it is in the freezer for another use some other time.

This is the end result.

I put cheese on mine I used a vegan cheese you could use any cheese of your wish if you are not following of vegan diet.

Rice Noodles and Vegetables

Gluten free and dairy free, vegan

Ingredients

  • Mix of veggies, green pepper, red pepper, squash, red onion
  • Dandelion
  • Rice noodles
  • Parmesan cheese-vegan
  • Olive oil
  • Salt
  • Pepper

I used a mix of pre-cut vegetables that’s at the grocery store.

First I cut up the vegetables and started to saute them in olive oil after they cook down I added the dandelion. I turned down the heat to a simmer.

By the vegetables were sauteing I boiled water for the rice noodles. Follow the directions to cook those on the package. It took 7 minutes for the rice noodles to be cooked.

Drain the rice noodles with cold water. Then add to the vegetables and stir together.

At parmesan cheese on top with salt and pepper. It goes well with a side salad and garlic bread.

Fruit Ice Cream

dairy free, gluten free

It’s been a hot and humid few days. My air conditioner works but it takes forever for it to cool the house down. So there are times, I don’t have it on because that would be an expensive electric bill!

What’s the next best thing to have to cool down from a humid day? It is ice cream!

Dairy free ice cream is very expensive. It also leaves my stomach is a little pain and feeling uncomfortable. So I decided to try making a FRUIT ICE CREAM.

OMG it is so simple!

Fruit Ice Cream Recipe

  • 4 cups frozen mixed berries-use any fruit combination you want
  • 1 cup coconut milk or any milk of your choice
  • 1/2 tbsp powdered stevia or more to taste, also can use honey or maple syrup

Use a food processor. Place the frozen berries in the processor, along with the milk and sugar. Process until it is smooth. I had to make small portions because my processor wouldn’t work with it completely full.

Then place the smooth fruit mixture in a metal pan(bread pan), cover with cling wrap and freeze.

set it out for 5-10 minutes to soften before you want to eat it.

Portobello Mushroom Pizza

This afternoon, lunch was planned. Lately, my stomach has been picky. I have to eat gluten free dairy free and soy free. Having digestive issues, rheumatoid arthritis and lipedema, this is the best diet to keep inflammation under control.

Portobello Mushroom Pizza

Ingredients

  • Portobello mushrooms
  • Tomato sauce
  • Vegan parmesan cheese
  • Olive oil
  • Toaster oven

Set toaster oven to 350 degrees.

Cut the stems and scrap out the black veins of the mushroom. Use a spoon or something blunt.

Put some olive oil on the mushroom where the stem was.

Bake in toaster oven for 3 minutes.

Flip the mushrooms over.

Add tomato sauce and cheese. Bake for 20 minutes. Keep an eye on it, mine was done in 15 minutes.

I served it with potatoes fried in olive oil. You can make a salad or have it with spaghetti. I was craving potatoes!

Tuna Sushi Rolls and Soup

This is the first time I tried making sushi rolls. It was a slight challenge.

I mixed tuna with dairy free mayo.

This rolled it.

Then put plastic wrap around it and placed it in refrigerator.

I served potato soup and side of colorful carrots to the sushi tuna rolls. It was delicious

Gluten Free Lunch and Dinner Ideas

Lunch

Eating gluten free and dairy free has helped me to be more inventive with my meal ideas.

Today I made a plate of cucumbers, tomato cut in wedges, guacamole and gluten free crackers. With hot tea. Then I had a few gluten free Oreos.

Dinner

The new Dutch oven was used, along with the new pans. They cooked this meal wonderfully.

Make rice. Then cut in slices zucchini and yellow squash and cut red onion in thin sliced. Saute with salt and pepper. Then add the mushrooms.

Then cook the shrimp. I used frozen cooked shrimp. I put cold water on the shrimp before it was heated up. I put butter in the pan. Then later I added coconut aminos for added flavor.

I put a sliced avocado on the side along with watermelon and cantaloupe.

New cookware

I have been searching for new cookware. I like using nonstick pans but once they get scratched it’s not healthy to keep using them.

I was looking at stainless steel, but the cost of them has increased and I couldn’t justify spending that money on pots and pans that I don’t use. So I opted for nonstick pans. I also chose to buy the pans only not the entire set.

I wanted a smaller Dutch oven as well.

These products are amazing. The quality and how it cooks food evenly is unbelievable.

I’m very happy I spent my money on these products.
